I Got Bored So I Roasted a Chicken - Picture of My Dinner 9-30-08
Pretty simple preparation. Washed and dried about a 5 lbs whole chicken. Drizzled on some olive oil and seasoned with kosher salt, freshed ground black pepper, garlic powder, and cumin. The inside was stuffed with onion, chopped leak, and lemon.
This all rested on a bed of onion, baby carrots, and chopped leak on a roasting pan. Added a little water to the bottom and it went into a 400 degree oven.
After 30 minutes, basted with liquid in the pan and rotated the pan180 degrees. 20 minutes later, did the same. I think one or two more cycles of this, checked the temp in the thick part of the thigh and let rest for 10 minutes. Chopped flat leaf parsley. Easy peasy.
I did not make a pan gravy, because I am a good kid.
