Homemade strawberry icecream. Some of the strawberries were heated until mushy, pureed and then mixed into the the cream base. I left some strawberries in larger mushy chunks that were mixed into the icecream as it was finishing.
I made half the usual porportioned recipe which produces about a quart.
1 cup heavy cream
1/2 cup whole milk
3 egg yolks
1/4 cup sugar
pinch of salt
1 vanilla bean (i love vanilla!)
strawberries: i began with a quart. it's hard to give exact ammounts because quite a few never made it into the icecream! I'd say a 3/4 cup of puree and 1/2 cup of larger mushy chunks. I say mushy chunks because I didn't just cut up whole strawberries and dump them in. Unsoftened strawberries, I've found, are too hard once frozen into the ice cream.
I didnt' use much granulated sugar because the strawberries have sugar anyway.
