Ever since we harvested them in September, the beans have been piled up in the greenhouse to complete drying.  The next step is to break the pods off the plant and place the pods in a bag.

The beans are then emptied into a bucket, and we winnow them by pouring them back and forth between two buckets in front of a strong fan.  Leaves, twigs and dirt get blown away while the beans drop into the other bucket.
