Migas Frittata

Had the ingredients for migas on hand, but decided to try a non-traditional execution.

For those who aren't familiar with Tex-Mex cuisine, migas (roughly translated as "crumbs") is a breakfast dish made from corn tortillas (or old corn tortilla chips), eggs, and usually a mix of what I think of as "Mexican mirepoix" -- onions, jalapeños, and tomatoes -- all scrambled together. I usually add pepper jack cheese, but for this I used a crumbly queso fresco.

This turned out pretty good, especially with a side of fresh guacamole. I served it with a light salad of greens and red radishes with a honey-lime vinaigrette.
