      hi ehmeelu, i actually trim the stem on a bias (whatever angle is parallel to the dominant plane of the top of the broccoli "pouf") so that the whole thing for the most part sits flat... it's sneaky!

      thanks judy and lovebones! judy, the music note is made from green soy paper. it's like nori, but i have found it doesn't stick as well when you use it for sushi (you need to use mayonnaise or another fat to "seal" it).
