I decide to use the meat from some chicken legs and leave it as whole.
(not cut into pieces like it's normally done with Korean BBQ meat).
Marinated it in gochujang (Korean chilipaste), mirin (Japanese sweet ricewine), light soy sauce, garlic, sesame oil, ginger, spring onion, black pepper, lemon-juice and sugar.
Grilled it in my griddle pan, let it rest a bit, then sliced it in
bite-size pieces to wrap it in lettuce with spring onion and
ssamjang.
