Chinese Tea Egg Salad

So what to do with those beautifully marbled Chinese Tea Eggs when, like me, you actually don't particularly like eating hard boiled eggs? ;-)
This is my idea: make egg salad with them!

I mix the eggyolks with some mayonaise until smooth and runny. Then add the eggwhites cut into cubes. Although a little bit of sambal oelek (indonesian chilisauce) and flat parseley are a nice addition, it might be better to leave it with just mayonaise as you still want to taste the "Chinese Tea Egg" flavour. Otherwise you could have saved you the trouble and just have boiled the eggs for 10 minutes in plain water.
