Sweet, Aromatic Soy Sauce (fu zhi jiang you)
1/3 cup dark soy sauce
2/3 cup water
6 T brown sugar
1/3 cinnamon stick
1/2 t fennel seeds
1/2 star anise
1/2 t sichuan pepper
1 small piece of ginger, unpeeled, crushed
Combine all ingredients in a pan.
Bring to a boil, and stir until the sugar is dissolved.
Turn the heat down and simmer for about 20 minutes.
Strain out the liquid, leave to cool.
