Sfincione-Neapolitan Hybrid Dough for Pepperoni Pizza![]() Sfincione is a Sicilian onion pizza.
Sfincione dough uses semolina flour, not bread flour, and is topped with bread crumbs. It makes for a very crunchy pizza. The dough in this picture is NOT sfincione dough, but a regular Neapolitan dough + the eggs, bread crumbs and semolina flour found in sfincione. Eggs increase dough hydration a lot. I added semolina and bread crumbs to correct the hydration. -::- Ingredients for Pizza con le Salamino Secco Piccante e la Mozzarella di Bufala Campana: DOUGH = bread flour + semolina flour + fresh bread crumbs + olive oil + sea salt + yeastie beasties + eggs. SAUCE = tomato paste + water + parmesan cheese + garlic + honey + anchovy paste + mustard + shallots + garlic + dried oregano + dried marjoram + dried basil + ground white pepper + cayenne pepper + dried red pepper flakes + salt.
