The number of small olive oil producers in Provence is growing. People from the city, going back to the countryside, buy grounds planted with olive oil. Many of them develop a special relationship with that tree and start producing their own olive oil. The olives are recolted by hand, often with a little help from friends, during late autumn.

I was touring Provence last a week for a report on that subject, here's just a sample.
