Potato Broccoli Soup

with homemade croûtons.

In an effort to finish all of my projects at once before returning to work, I cleaned out the freezer. I couldn't fit everything back in, so I made potato broccoli soup. Turns out I had three giant bags of frozen broccoli. I kept thinking I was out because the package would get buried and I'd buy more.

For a soup made from frozen broccoli, this turned out excellently.
