Allan Goldberg of Alpharetta says he's had to do more of the cooking in the last two years since his wife started working outside the home. He developed Easy Mediterranean Fish from an older recipe involving melting margarine, putting in the fish and then sprinkling with lemon juice. "Watching some cooking shows made me think that dredging in olive oil and a combination of lemon and lime juice might provide a little marinade effect and improve the taste, " Goldberg says. "It also seemed like some chopped olives on top would make it more exotic. I gave it a try and it is now a standard recipe in our house."
