Pumpkin Pie
Just to add confusion - i had those Xmas candies in the next picture on the counter, as I made this very yummy pumpkin pie last night.
But this, let me tell you, was just divine. I took a slice, cold, in the car with me this morning as I was in too much of a rush to eat breaktast. The best idea ever !!!! Recipe base 1c plain flour 1/2 c self rasing flour 2 TBSP rice flour 2 TBSP icing sugar 125g butter 2 TBSP water Filling - 2 eggs 1/4 c brown sugar 2 TBSP maple syrup 1 1/2 c cooked, mashed pumpkin 2/3 c evaporated milk 1tsp cinnamon 1/2 tsp nutmeg 1/2 tsp allspice 1/4tsp ground cloves usual base idea, blitz in processor if youre busy, or rub butter in to flours/sugar and add water to bring it together into a ball... rest in fridge for 30 mins to avoid shrinking - i didnt do this, obviously... far too impatient ... roll out to form base, blind bake ( @ 170celcius ) for 10 mins, then cook a further 10. .. combine all the filling ingredients into a processor.. zap until smooth and creamy. pour into half-cooked base, and bake for @ 50mins at 170c.
