![]() Steve kept calling our dinner tonight "lamb," but we had goat. This is a dish that Dale made in the season 3 finale of Top Chef. The judges called it "a triumph." Steve finally got around to making it. It was tasty, although he may have to make it again to get the balance right. There was a lot of garlic in the green stuff.
The original recipe was Colorado Rack of Lamb with Ratatouille & Sauce Vert. According to Steve, this is a Confit of Marin Sun Farms goat ribs. Served with sauce vert of home-cured anchovies, olive oil poached heirloom tomatoes, eggplant purée, and summer squash.
