yesterday's leftovers, actually.
so damn good, too.

clockwise: tomato watermelon salad, homegrown cuke slices with ranch dressing, cherokee purple cherry tomato and green bean salad, cooked butterbeans, and caramelized onion-jalapeno cornbread.

The watermelon/tomato salad was good only one slight problem. 5 cups of watermelon and 5 cups of tomatoes is a metric buttload of salad. That's a whole lot of fruity goodness there. We gave a way a bunch of it to some friends and we still ate our fill of it. :)

Preheat your oven to 350 F
Caramellize sliced onions (I used 1 small onion or half of a large onion) on a cast iron skillet-- set on med heat, add enough butter to cover, and cook onions until they brown and smell nice.

mix the following dry ingredients:
3/4 C flour
3/4 C cornmeal
1/4 C sugar
1 1/2 tsp salt
1 1/2 tsp baking powder
1 tsp baking soda

Add:
2 tsp jalapeno, minced and seeded
1/2 C caramellized onions (keep the skillet dirty-- you'll need it)

Melt 1/4 cup butter in the same skillet and cool it
In a different bowl whisk:
1 1/4 C buttermilk (or 1 cup milk and 2 tsp cider vinegar, set aside for about 10 mins until it curdles)
2 eggs
1/4 C melted, cooled butter

Add the wet ingredients to dry ingredients, stir well, dump back into now well-greased skillet. Put skillet in oven and bake for 20-25 minutes until a toothpick inserted comes out clean. Cool completely (it will be moist).

my fiance made the cornbread tonight. the jalapeno vanished (for real, like where did it go??????) but it was good all the same. a new family fave, even the 4 year old loved it!
