barley wonder

barley wonder by eatzycath.
another 'body cooling' drink cum dessert which is fast becoming one of my favourites - china barley (which has quite a nice nutty flavor) simmered for an hour or more with gingko nuts (for brain power) and strips of soya beancurd (which softens during cooking creating this lovely milky color in the soup)

a perennial favourite all year round for me:-)

My favourite is the version where the soybean sheets have all melted, so you have this thick soymilk soup.. this is sometimes served in Hong Kong dessert shops but not always.

Some of the 'surefire' ways of getting the sheets to melt, none of which worked reliably for me, include soaking the sheets overnight; using fresh sheets (this I've only found at the wet markets in Hong Kong), and using this soda water thing that you can buy in Singapore baking stores. Someone told me you can just whizz the whole thing in the blender to get a similar effect, but that would be cheating :)

Know what u mean, but personally I prefer to have some of the sheets still floating in the soup - didn't know about the soda water thingy though, thanks for the tip - will check it out just out curiosity!
