Picque-Nique

    "Picnic" is originally a French word, "picque-nique," which first appeared at the end of the seventeenth century. It later spread to Germany and other countries, but didn’t become widely known in English until after 1800. It referred to a fashionable type of social entertainment in which each person who attended brought a share of the food. The first part may be from the French "piquer," from which we get "pick." The "nique" part may just have been a reiteration (as in English words like "hoity-toity"), but could have echoed an obsolete word meaning “a trifle” (so the term could have meant something like “each pick a bit”). The association with an outdoor meal didn’t appear in English until about the middle of the nineteenth century.

    If you plan on having a family outing for your Memorial Day celebration this year, why not try this picnic recipe:

    Shakin' the Shack Potato Salad
    (from "Famous Dave's Backroads & Sidestreets")

    3 lb. medium russet potatoes
    1 1/4 C. mayonnaise
    1/2 C. sour cream
    1 T. prepared mustard
    1 T. white vinegar
    1 tsp. salt
    1 tsp. sugar
    1/2 tsp. pepper
    1/2 C. finely chopped celery
    1/2 C. finely chopped red onion
    1/2 C. finely chopped green bell pepper
    2 T. finely chopped pimento
    1 T. finely minced seeded jalapeño
    5 hardboiled eggs, finely chopped
    1/4 C. pickle relish

    Combine the potatoes with enough water to cover in a large saucepan. Bring to a boil. Boil until tender but not mushy, then drain. Chill in the refrigerator.

    Peel potatoes and coarsely chop. Combine mayonnaise, sour cream, mustard, vinegar, salt, sugar and pepper in a bowl and mix well. Stir in celery, red onion, green pepper, pimento and jalapeño. Fold in potatoes, eggs and pickle relish. Chill, covered, until serving time. The flavor is enhanced if chilled overnight. Garnish with paprika.

    Yields 10 to 12 servings.

      reminds me of a night a long time ago when we bought a couple hundred forks and stuck all of them in this dude's front yard...we were so bad forkin people.

      Ha! Just got back from our McPicnic, which is what we call the McFarland side's annual gathering. And yesterday was my sister-in-laws wedding. So we had plenty to do without boiling potatoes all day, and went with the Red Hot & Blue potato salad, when normally it would be my own version.

      There's something about potato salad, and meatloaf for that matter. Doesn't matter what anyone else's tastes like, only mom does it right. Therefore my potato salad is really my mom's, and I was lucky enough to marry a man whose mom must not have made great potato salad, or I'm just persistent and he had no choice to pledge allegiance to mine & mom's. :)
