Locally, the air is quite calm on this day, but the air shifts in an irregular way. We are several minutes behind this aircraft, and in those minutes, the contrails are spread out in the way you can see here. Whether or not contrails are visible, and how long they last (if they form at all), is something that can be calculated. It is a function of relative humidity and temperature.
