You don't want to know. You really don't. But I'm going to tell you anyway.

Tonight is a pot-luck anniversary party for my friends, Steve and Kathryn. Steve asked for a white chocolate cheesecake, but I've made two of those recently, and, well, I'm tired of them.

I had some caramels from the dollar store, and I bought some white and milk chocolate chips today.

I made the usual white chocolate cheesecake, but I took about half the batter and mixed it with melted caramel and heavy cream, then swirled the cheesecake a little.

I also splurged on some long, heavy-duty foil, so that I could bake the cheesecake in a bain-marie, or water bath. Real cheesecake bakers use these to keep their cheesecakes from cracking. And it worked. (It also nearly doubled the baking time.)

For something new, I made a milk chocolate ganache, instead of a white chocolate one. With the remaining chocolate, I stuck on slivered almonds.

No preserves in this one. It's pure gooey goodness, with a shortbread cookie crust.

What's best about it is that I made up the recipe. How can you go wrong adding gooey, melted things that dry thick or hard—oh, wait, are we still talking about food? Yikes.

Anyway, I think the caramel was very strong, and I probably could have done without the white chocolate. But it went quickly in tiny slivers, so I guess people did actually like it.

Now, you all know, right, that cheesecake isn't cake; it's pie. A woman at the party said my revolution—trying to have it renamed cheesepie—will never catch on because of quiche. But I'm thinking of calling it cream cheese pie. Because it's crust and filling. It's not at all cake.

This deserves to be eaten - no, savoured - every last morsel of it. Made with love and respect, it's crying out to be looked after in the same way, and all that devotion transferred to eager tastebuds and stomachs. Like mine, for instance... I'm very jealous of your friends ;-)

Any chance you could share the basic recipe?! Really want to try this...
