The fresh seafood, I think, Jag, though both
the chilli content and the acidic citrus
content are thirty times sharper than next
door in Ecuador, where ceviche's served in
orange juice, with fried plantain roundels.

In Chile we eat them with melted cheese,
sugar or powdered sugar. At least that's how
my family used to eat them but I haven't had
one in ages.

(people here find the idea disgusting).
