I tried smoking some tofu earlier this winter
and the results were similar to yours--it was
terrible. I didn't have as sophisticated of a
setup as yours, but I used oak chips in a
weber kettle. In two words: it sucked.

Interesting. Guess it doesn't matter what
kind of setup is used. It's just a bad idea.
I have grilled it at high temps on my gas
grill and it was very good. Served it with
grilled portobellos. The gas grill is just
like a stove top that doesn't need cleaning
I guess.
Back to the drawing board.
