Fried Saimin

While in Las Vegas this past week, I was graced with a visit to Island Style on W. Sahara. This Korean eatery is tucked into an unassuming strip mall on a street full of strip malls. Once inside, you are greeted with a terrific atmosphere and your hosts (including the owner) exude an amazing air of hospitality and you truly feel welcome. The owner will be your best friend within a minute or two. :) The visual appeal of the Fried Saimin (which is actually a Hawaiian dish) grabbed me immediately and I ordered it right up. A generous portion (probably enough for four adults) was served up. Sides of cucumber, radish, and cabbage soaked in hot chili sauce along with amazing boiled peanuts were served while waiting for the main course. I knew I had to attempt to imitate this and the following is my approximation. Give this recipe a try and visit Island Style next time you are in Vegas!

Fried Saimin (sort of)

Ingredients:

Two 6 oz. packages of Chow Mein Stir-fry noodles (or saimin, if you can find it!)
3 cups of green cabbage (bite size chunks)
2 carrots (matchsticks)
1 celery stalk (sliced into half moons)
½ yellow onion (diced)
4 radishes (thinly sliced into circles)
½ can of spam (matchsticks)
6 strips of imitation crab meat (matchsticks) (half to be cooked, half for garnish)
3 green onion greens (chopped for garnish)
Salt and pepper to taste
House of Tsang Stir-fry sauce
Vegetable Oil

Directions:

1)Prep all ingredients as indicated above.
2)Boil noodles, per directions but cook for 1 less minute than indicated and drain.
3)While noodles are boiling, heat skillet or Wok (used iron skillet here) and add 1-2 tblsp. of vegetable oil and 1 tblsp. House of Tsang.
4)Add diced yellow onion, carrots, and celery. Stir-fry until onions are translucent.
5)Add spam and half the imitation crab meat and cook for a couple of minutes.
6)Add cabbage, radish, another tablespoon or two of the House of Tsang, salt and pepper to taste, and toss about whilst frying for a minute.
7)Add the noodles to the skillet and mix thoroughly and fry for 4-5 minutes.
8)Serve garnished with remaining strips of crab meat and green onion greens.
9)Serves 4+

Little Princess

Little Princess

Belah, my little princess, dress and ready to attend her first birthday party at a friend's house. She has been so excited to go!

The party is for a friend but Belah also just turned three about three weeks ago. So far, still a bundle of joy! :)

Built between 1969 and 1971 with a total production run of 47 units (6900-6946), the Union Pacific Centennials or DDA40x locomotives are the longest and most powerful diesel locomotives ever built. Two engines mounted on a single frame produce 6600 HP (4.9 MW).

1969 was the 100th anniversary of the golden spike event, hence, Centennials.
