pumpkin cookies

    I made pumpkin pie pancakes (say that seven times fast) this weekend. I was left with a bunch of leftover pumpkin puree, so I thumbed through a few cook books and found this gem.
    Pumpkin cookies
    1 cup butter, room temp.*
    1 cup sugar
    1 cup pumpkin puree**
    1 egg, lightly beaten***
    1 tsp vanilla extract
    2 cups ap flour
    1 tsp baking powder
    1/2 tsp baking soda
    1 tsp ground cinnamon
    1/4 tsp ground allspice
    1/2 tsp salt
    1 cup chopped toasted peanuts****
    1 cup raisins
    1/2 cup chocolate chips (optional)*****
    Cream butter and sugar. Add pumpkin, vanilla, and egg. Sift together dry ingredients. Combine with wet. Add nuts and raisins. Drop by rounded teaspoonfuls onto ungreased baking sheet. Bake at 350 for 10-15 minutes.

    * I used buttery sticks
    **I used a wee bit more than a cup. I didn't really measure-it was all I had leftover after making the pancakes
    ***I used pureed silken tofu (also unmeasured)
    **** I didn't have peanuts on hands so I used walnuts
    *****I opted not to use them. :)
