	c(h)ristine says: I just prep it all ahead of time, because I have learned over the years that it really sucks to have to chop something really quickly before whatever's in the pan starts smoking and charring. If I know there is a BIG pause between things (like when something has to simmer for 2 hours or whatever, or even 45 minutes) then I prep in that span of time. But it is really nice to just prep it all and then just throw them all in systematically when it comes time to cook!
