Huevo montao a caballo, pero de lujo!

The story says that when people from the countryside of Panama came to Panama City they were used to eat fried egg and white rice. Time passed and I truly think there is not one authentic panamanian that has not eaten this poor's people food. Now, as a tribute to my dear panamanian people I am dressing up this egg and rice dish. How about a panfried rice cake, sweet and sour peppers, bacon and the most complete food (next to whole milk, of course): the egg!!!
