tiramisu

tiramisu by chocolate monster mel.
Must be something about the season, either that or something's in the air -- two of my flickr friends have posted pictures of tiramisu and I viewed them the day I made some for my mother-in-law's birthday! I'm a coffee lover so this is one of my favorite desserts.

Di, I would have to say -- have everything ready (mise en place :P) and start with room temperature mascarpone so it's easier to make it smooth (no lumps); room temperature espresso for dipping, don't want to burn your fingers. I usually bake sheets of sponge but lack of time had me using store-bought ladyfingers. The sponges, which are more moist, soak up the coffee faster (makes for a more moist cake layer). I could have dipped the ladyfingers in the coffee longer but was afraid of having them disintegrate into the liquid! (This would depend on your preference -- heavily-soaked sponge layer vs. lightly-soaked.)
