maruya

    A Filipino snack traditionally made of saba bananas dipped in batter, fried and rolled in granulated sugar. This version has sweet potato in it (the kamote rules in Batanes), sliced into thin "french fry" strips and is fried til the sweet potato is crisp.

    Think tempura, but with sweet banana and sweet potato.

    Yum.

      hi daphne, yup it can. I tried making it ala tempura -- just buy the tempura flour. :) traditionally though I think it's 1 cup flour, 1/2 cup milk, 1/3 cup sugar and 1/2 t baking soda, 1/2 t baking powder and 1 egg. Mix like you would do muffins (liquids into sifted drys) and toss in the bananas and camotes!

      Here, in Malaysia, we have a quite similar snack - dipping banana in a batter and deep frying. but without roll in the granulated sugar.
