h2okatcher, it literally means "cooked cream" and it's basically that (in some cases other dairy like buttermilk, sour cream, creme fraiche, milk, half and half, well you get the idea hehe is used with cream), with flavoring/s and set with gelatin. Very creamy, it's an eggless custard!

burlie, the sweetness of the balsamic complements the strawberries well, you hardly taste the acid once they've macerated. I *did* run a knife around the edges :)
