haha... its what we locally call coconut
sport. a friend makes a mean sweet coconut
balls. the translucent gelatinous coconut
balls float on gooey sticky syrup...
i am from san miguel bulacan, grew up there
the home of the best ube, pastillas and
macapuno sweets. it has the finest infact i
myself have it as a business here in manila
where i live now. its the fresh ube that we
make recipe i got from my lola and lolos. you
can order at my shop san migeuel sweets and
delicacies at 9361265 look for raquel.
i LOVE macapuno. but i really doubt that the
product pictured above is the real thing.
they even have the picture on the label
wrong! real macapuno, when cracked from the
shell reveals small bits of soft coconut
floating on a gooey mucus. the taste is sweet
and mellow and melts in your mouth! the
bottled product is usually just mature normal
coconut that's been cooked and mixed with a
minimum of macapuno, hence the strong coconut
flavor. besides, macapuno doesn't come in
uniform strips of meat as in your picture.
and yes, AndreaFoodie, macapuno is the result
of a genetic mutation common in the plant
world as the phenomenon called "sport
fruit."
