Black Cake - Just out of the oven
This is black cake made almost Trini style, or rather Trini-Muslim style, without the alchohol. Mom makes a great one, that is always dark, rich and moist. She makes this for Eid as in previous years. It is a fruit cake, made from lots of moist ground fruits and browning, sometimes molasses etc. Traditionally, people soak the fruits in alcohol for a year before, and then soak the cake.
We made 4, 1.5 went with me. Baked them in the handy Danish Butter cookie tins which make for great storage :-)
