Monda Night Dinner

Spicy Tortilla Soup sans tortillas, so really it's just spicy chicken soup

Max- no dinner, sorry.

Here's how you can make it at your house:

fine dice two or three celery ribs, with leaves
slice up a jalapneo (I prefer serano)
mince 2 cloves of garlic
mince 1 shallot

Sautee all of that together with some olive oil in a stock pot. After about 5 minutes add 2 huge cans of chicken stock. I use 2 chicken breasts, but you could use any part of the chicken you wanted. Add some halved cherry tomatoes and frozen corn. Cook for a bit.

Serve with cilantro and lime on the side.

Enjoy with friends.
