- For the salad:
. arugula or rocket salad
. foie gras
. slides of dried or smocked duck breast (magret)
. mustard vinaigrette dressing
Put the arugula/rocket salad in a large plate, decorate with the slides of duck breast all around the salad, put the large slice of foie gras on the top and add the vinaigrette.
- For the little goat milk cheese’s pastries
. puff pastry
. goat milk cheese (as fresh as possible)
. poppy seeds
Roll out the puff pastry, crumble the cheese on one half of the pastry and then cover with the other half. Slice little rectangles of the filled pastry, cover with egg yolks (with a kitchen brush) and then put the poppy seeds on the top. Bake in the oven.
