We have been craving the amazing Prague hot chocolate. Topher got me a great hot chocolate cookbook for Christmas. The following recipe was the one:
Chocolate a la Taza
1/2 c whole milk
1/4 c heavy cream
4 oz semi-sweet chocolate, chopped
1/2 tsp cornstarch
1/2 tsp vanilla
In a saucepan, combine the milk and cream and heat over medium-low heat until very hot but not boiling. Gradually add the chocolate to the hot liquid, stirring constantly with a wooden spoon until the chocolate is completely melted and the mixture is smooth. In a small cup, dissolve the cornstarch in a few tablespoons of water. Add the dissolved cornstarch to the chocolate mixture and stir constantly until it is almost as thick as a pudding.
