step two: slice peeled carrots, arrange in pan. squeeze one lemon over carrots, add loads of butter (as advertised), freshly ground black pepper, & kosher salt. i had the oven at 375°F for the first two hours. turn every half hour.
step one: gather the hugest carrots anyone has ever seen & two lemons (&, if you are also making skin-on mashed potatoes, half a dozen potatoes). peel the carrots, warm the lemons.
step four: realize that 400°F was probably a little ambitious. take blurry photograph of disgusting-looking but UTTERLY DELICIOUS crunchy/chewy lemony/sweet roasted carrots. try not to devour them all immediately.
