Mr. bunchofants has been buying too many bananas over the past couple of weeks hoping that some of them will get overripe and I'll make banana bread out of them. He could have just asked ...I've been eating bananas like crazy thinking "Hey look at all these lovely bananas." But tonight there were three that were almost fermenting, and that's when they make great bread. The recipe called for nuts but Mr. BoP wanted raisins instead. I must say it's damn fine banana bread.

Have you ever made it with chocolate chips? It makes it harder to pretend the banana bread is kind of healthy, but it is quite tasty.

Usonian, I know this will sound weird, but I can take or leave chocolate chips ... I's prefer nuts or raisins!
The recipe (from here)--I substituted butter for the shortening (I didn't have any!) and raisins for the nuts:
* 1 cup sugar
* 1/2 cup shortening
* 2 eggs
* 2 cups flour
* 1/2 cup chopped walnuts
* 1 teaspoon baking soda
* 3 soft, ripe bananas, mashed
Cream sugar and shortening; add eggs, flour, soda, bananas, and chopped nuts. Pour banana bread batter into 1 greased and floured loaf pan; bake at 325° for about 1 hour and 15 minutes, or until a toothpick inserted in center comes out clean. This banana nut bread recipe makes 1 loaf.

Funny, I was looking at the three over-ripe bananas on my kitchen counter this morning and thinking "tasty baked treat. Want now. Need recipe" (it was pre-coffee). And now, magically, I have one. Thank you.
