Quinoa with corn, red bell pepper and shallot.
Steamed cauliflower with citrus vinaigrette like sauce.
Lettuce heart and sliced apple.

You've gotten me interested in Quinoa; I had never heard of it. So, of course, I went to the wikipedia article. Apparently certain institutes consider it the most nutritious food in existence. Nice!
