It was definitely my favorite - Husbear thinks they overcooked the crepe, but I liked the darker bits. Like a built-in crouton!

Thanks! Our crepes are from Galicia, in the northwest from Spain, and we call them filloas. We cook our filloas, the galician crepes, on a hot stone because is our celtic cultural heritage. 1.500 years ago the crepes traveled from Central Europe to Spain (celtic culture in Spain) England and Ireland in the hands of the celts. In England and Ireland nowadays they are called pancakes, not filloas like in Galicia or crepes like in France. Crispelli in the north from Italy?

Thank you for the additional information! It's very interesting. Every culture seems to have some sort of flatbread! Yes, Italian crepes are usually called crespelli, but you will see crepe on some menus (like this one, from Ostuni, Puglia).
