Salmon poached with liquorice, pertuis asparagus, pink grapefruit, "Manni" olive oil by Boots in the Oven.
Beautiful presentation, but not our favorite.

This pairing was just about impossible (asparagus? liquorice?) but the sommelier did his best with a 2001 Quinta da Falorca Reserva from Dao, Portugal.

OMG. TFD. Yes, THE Fat Duck.
