Here's the rundown on the coloring of the chickies: lancaster.unl.edu/4h/Embryology/colorchickens .shtml

Basically, vegetable dye is injected into the egg before they are hatched, so the chick is actually born this way. It's not just for Easter fun, but also used by scientists as a way to distinguish birds and observe their movements and habits directly after hatching. Cool huh?
