Greek Lamb Pilaf

    Made this for lunches this week. Careful about the time needed to absorb the liquid. Maybe because I used brown rice instead of white, but it took almost an hour to soak it up.

    *update* - blech. something needs to be changed in the recipe execution, it was just kind of greasy and nasty. I think cooking and draining the ground lamb separately and then using olive oil for the onion/carrot/garlic and rice would help with that problem.
