Leftover Roast Beef Rib-Eye salad with Pomegranate Vinaigrette

    I made a refreshing salad for dinner from some leftover roast beef and a simple vinaigrette with pomegranate and lemon juice.

    I added some shredded mint, because it was summer, and it is growing profusely in my backyard, and because I love mint! :)

    The lunch version was simpler.
