you can skates with 3 wheels it's not a
problem (i skate myself with 2 wheels on each
skate, it's called a freestyle setup). It's
used on aggressive rollerblading. Some pro
skaters rides with 3 wheels :

The sign itself is not bad and quite minimalistic. I've never seen skates with three wheels in real life though

mostly because it's a good compromise with a 4 wheels setup (which provide speed) and a 2 wheels setup (which eases grinds)
