What's the character of this honey? The name makes me think that it might be dark and kind of spicy, with some smoky notes - possibly like the mesquite honey that's available in the US.

The character comes from the Leatherwood, which is a type of tree that grows in Tasmania. You're probably quite close with your description, definitely much darker and spicier than normal honey, with a lot of earthy undertones.
