yummers! my parents have always had gardens,
and would occasionally harvest gargantuan
squash........i have a great recipe for a
zucchini casserole if you want it!
holy god! yes, the big ones are best for
baking because they don't have as much
flavor. i recommend zucchini bread- you
could probably make five loaves with that one
and freeze some! i've got a great recipe if
you need one (also for cookies and
muffins...)
woah!! I bought one about that size recently
from an organic farm stand... I had never run
across that size zucchini in the store. ;) I
think it lasted us about three meals!
:) I would love any and all recipes anyone wants
to share! We actually found a few more, too-but not
quite so big. It was so funny because I work at a kid's
shop and we had it on the counter so kids
could see it...their reactions were
priceless! Happy Saturday, friends!
i wish i would have found all of you nice
people when i turned my back on the zucchini
for a week earlier this season. several
scary giant zukes were composted, i'm sad to
report. i even put them out on the sidewalk
for free first!
oh, a friend gave me one even bigger than
this a few weeks back! miles could barely
carry it. i grated it all up and then froze
it in the portions needed for a loaf of
zucchini bread...i always put lemon zest in
mine.
:) yes, I think you are all right-zucchini bread
it is! And chocolate sound like a great
addition...lemon zest, too! I leave for my
sister's soon-we'll bake tonight. greenlook-:) thanks-you may be seeing a lot
more of it...my new favorite spot
I know I'm late on this but Ms. Stewart has
an awesome recipe for zucchini fritters with
a dill sauce on her website (I just did a
search). I made them the other night for
dinner and they were not hard to do, and they
were soooo good. For your next zucchini anyway :)

Oh my gosh, this has happened to me before -- It was in my students' garden, and it was as big as one of the girls in the two-year-old room.
My advice: Zucchini bread, and lots of it.
