Quinoa, cherry tomatoes, chickpeas, mozzarella I think, basil, olive oil, balsamic, s&p. Sort of a heftier caprese salad.

I just bought a huge Costco bag of quinoa, so there might be more of these coming.

So much snow meant the opening of the road was as delayed as its been in a very long time. It also meant a lot of people had cancelled their trips, so it was relatively traffic fee - an August anomaly.
