1 large english cucumber
1 tablespoon of salt
3/4 of a cup of white vinegar
1 tablespoon of sugar
White pepper to taste
1 teaspoon of salt
chopped dill to taste
Wash the cucumbers and slice them thinly. I use the Pampered Chef Mandoline. The thinner the better.
Place the slices into a collandar and put the table spoon of salt all over. I do it in layers with half the salt in the middle and then the second half on top.
Weight a plate or bowl on the top of the slices for one hour. Remove the bowl and dry the slices with paper towels.
Place the slices in a flat bottomed pan--like the pyrex pan in the picture.
Mix the remaining ingredients well and then pour over the slices. Chill for 3 hours and serve.
