Little sister of Kulen

Kulen is a Hungarian cured sausage similar to salami that is comprised of pork, paprika and garlic. I made a small batch of this and added a little cayenne for bite. Stuffed in hog casings, it's smaller than traditional kulen. Cured for a few days hanging in the basement, then finished in the refrigerator. I need to make a much larger batch next time, in properly sized casings; it will be cold smoked.
