Covered with plastic wrap and reserved. These were pretty cold when I was prepping them, so I left them out overnight to come up to temp evenly.
There's a commentary on Virtual Weber Bullet talking about how you may not get as much of a smoke-ring if you bring the meat up to room temp first, but honestly, I was not doing an overnight cook, so I needed the initial temp. If I was doing a Midnight Cook I could have started it at fridge temp.
