Pumpkin Bread

    Mmm, this is very tasty bread! And it is so moist! I owe it to the fact that I used fresh pumpkin. Anyway, here's the recipe for this scrumptious bread. I think this is the first pumpkin bread I've ever had, and definitely the first time I've ever cooked with fresh pumpkin.

    Ingredients
    1 1/2 cups flour
    1/2 teaspoon of salt
    1 cup sugar
    1 teaspoon baking soda
    1 cup pumpkin purée (fresh or tinned)
    1/2 cup olive oil
    2 eggs, beaten
    1/4 cup water
    1/4 teaspoon nutmeg (I used a pinch or two more)
    1/4 teaspoon cinnamon (I used a pinch or two more)
    1/4 teaspoon allspice (I didn't have allspice, so I ground up whole cloves and added a pinch of ginger)

    Preparation
    Preheat oven to 350°F (180°C). Sift together the flour, salt, sugar, and baking soda. Mix the pumpkin, oil, eggs, 1/4 cup of water, and spices together, then combine with the dry ingredients, but do not mix too thoroughly. Pour into a well-buttered 9x5x3 inch loaf pan. Bake 50-60 minutes (I had to bake about 15-20 minutes longer) until a straw (I used a stick of dry spaghetti) poked in the very center of the loaf comes out clean. Let sit for 10 minutes, then turn out of the pan and let cool on a rack.

    Note: If you want to use fresh pumpkin, I recommend cutting up the pumpkin into chunks and boiling until tender. Then cut the pumpkin out of the skin, and toss into a blender and blend until smooth for purée.

    Makes one loaf.
