Summer Pudding

    Ingredients:

    1 packet Lady finger biscuits
    1 tin pitted black cherries
    1 punnet strawberries
    1 box frozen mixed berries

    Method:
    drain cherries - keep juice
    dip fingers into the juice and line your bowl with them (the lady fingers, not your own, and don't lick them!)

    quarter strawberries
    halve cherries

    put strawberries and cherries into saucepan with 1 cup water and 1 tablespoon sugar and remainder of the juice
    bring to boil
    add berries

    stir through

    mix 1 tablespoon cornflour with a little water, and then stir into mixture, and stir until it thickens.

    Use slotted spoon to spoon berries into bowl.
    retain extra juice for pouring onto dessert when served.
    cover the top with more biscuits
    put bowl onto a plate then put a plate on top, and weight with two tins of fruit.
    - The plate you put the bowl on is to catch any juice that runs over the sides when you add the weight to the top.

    refrigerate over night
    turn onto serving plate - you can line the bowl with gladwrap if you think you might have trouble turning it out. I just ran a palette knife around the bowl and it came out fine.

    serve with cream and or icecream.
